Japchae (잡채)


Japchae (잡채)

Ingredients

‧carrot 1/2
‧shiitake mushroom 2
‧A half bunch of spinach
‧onion 1/2
‧round of beef (thinly cut) 2oz
‧korean vermicelli 4oz (Dangmyun)

beef seasoning

‧soysauce 1/2ts
‧sesame oil 1/3ts
pinch of sesame seed

spanich seasoning

‧soysauce 1/2ts
‧sesame oil 1/2ts
pinch of salt
                  
                          noodle seasoning 
  
                          ‧soysauce 2TS
                          ‧sugar 2ts
                          ‧sesame oil 1/3ts

Step

Korean starch noodle

1. Soak korean vermicelli(Dangmyun) for 10min and boil the noodles for 5~7min. Drain them thoroughly and marinate with the noodle seasoning.
2. Cut vegetables and beef into thin strips(length 2inch).


and marinate the beef with the beef seasoning.
3. parboil spinach and shiitake mushroom in boiling water. drain them thoroughly and marinate the spanich with the spinach seasoning

※ If you use dried mushroom, soak the mushrooms in warm water about for 30min
 
 
 
4. Saute the marinated noodle on low heat with some oil for 5min.
 
 
 
 
 
 
 
 
 
 
 
 
5. Saute the vegetables with some oil and salt on low heat and cool down.


follow this steps : onion → mushroom → beef → carrot


6. when the vegetables cool down completely, mix them in a bowl.








Tip : If it is too bland., add some Soysauce not salt.

This is my all-time favorite dish, of any origin. Thank you for the recipe. It looks amazing, and uses a slightly different technique than I am used to seeing. I can't wait to try it!
